Spreads Recipe

My favorite cooking show is Pioneer Woman, I love the weekends they have back to back episodes if I am not going to be home I record it. This last weekend she had a recipe called Spreads.

The fun part about this recipe there are so many variations you can do. On the show she made three different kinds. She made one with sprinkles, m &m’s and other candies and then drizzled caramel all over it, and the last one was smores . You just crush up some graham crackers and throw that on there with some marshmallows.

I can’t wait to try the smores version. I made this recipe yesterday the kids were home for a snow day, my son wanted it with just M&M’s on it. It was really good.

Stuffed Green Peppers

I have been trying to meal plan every week. I got tired of staring blankly at my pantry trying to figure out what to make for dinner. I am always trying to think of different recipes

This week I made Stuffed Green Peppers, you can make these a lot of different ways. I just winged it and made them last night and thought you might want the recipe so you can make them too.

Stuffed Green Peppers

Ingredients
  • 1 lb hamburger
  • Knorr Spanish Rice (5.6 oz packet
  • 8 green peppers
  • 2 cans Tomato sauce (8 oz can)
  • taco blend cheese
Instructions
  1. I boiled the green peppers for 15 minutes. Then cut the top off and scooped out the seeds. I browned that hamburger and drained the grease. I then combined the hamburger and rice in a large bowl and then added ½ the can of tomato sauce and mixed that all together. I then stuffed the green peppers with the mixture and poured the other half of tomato sauce. The last thing I did was sprinkle the cheese on top of each stuffed green peppers.
  2. Bake them at 375 degrees for about 20 minutes. Everything is cooked so you just need to warm everything back up and melt the cheese.
  3. Note: I only made 4 stuffed peppers because that is how many family members there are. I had plenty of mixture left to make four more so that is why I adjusted the recipe to 2 cans of tomato sauce

You could easily make this night before and then when you get home from work throw them in the oven. I thought this recipe was delicious.

National Gummi Worm Day

It is National Gummi Worm Day, they were created by the German company Trolli in 1981. Gummi means rubber in German.

My husband likes to make dirt cups with gummi worms. I found several recipes that include gummi worms. Have some fun and make some of these.

Veggie Frittata with Turkey Bacon

I am trying to eat healthier, which isn’t very easy sometimes. I am always looking for healthy recipes. Breakfast is one meal I have a hard time finding healthy items. I am in a rush in the morning trying to get the kids ready for school and get them to school.

I love watching Biggest Loser it such a motivating show and they also give great healthy recipes. Last night I was watching Biggest Loser and Bob showed the contestants this great breakfast recipe:

I adapted the recipe from a recipe on Biggest Loser website, They are delicious, easy to make and you can have more than just one. You can add any vegetables you want to add. You can store them in your fridge for up to a week or freeze them.
Ingredients
  • 1(8 ounce) package Jennie-O Uncured Turkey Bacon
  • 1 tbsp vegetable oil
  • ½ cup chopped red pepper
  • ½ cup chopped green pepper
  • 2 cups egg substitute or 8 eggs
  • ¼ cup milk
  • 1 tbsp chopped fresh parsley
  • 1 cup shredded cheddar cheese
Instructions
  1. Heat oven to 350 degrees. Mist 12 muffin cups with cooking spray. Cook turkey bacon as noted on package. Cut the bacon up into ½ inch pieces and set aside. Add oil and vegetable into skillet and cook for 5 minutes. In large bowl add eggs, milk, and parsley until well mixed. Stir in bacon, cheese and vegetables. Spoon mixture into muffin cups, fill approx. ¾ full. Bake 20 or until they set

Holiday Recipes

I am starting this week baking for Christmas. I am going to try to make at least one recipe a day all week. I want to make up a plate of goodies for the kid’s teachers, neighbors and our mailman.

I have been posting recipes I want to try to Pinterest all year long. So I went through the recipes and there were so many I can’t make them all  but I did choose some good ones.

The first recipe I made is Pretzel Hugs

All you need is pretzel rings, hershey hugs and m&m’s.

This recipe is so easy and they are delicious and addicting.

You just set the pretzel rings on a cookie sheet and put a hershey hug in the middle of each pretzel ring.

Bake at 250 degrees for 3-4 minutes make sure you watch them you just want them to start to melt but are still holding there shape.

Then pull them out of the oven and put a m&m in the middle of each hershey hug.

Then you just need them to chill and then you can start to eat them. Believe me you can’t eat just one. They are so good.

The next recipe I made is Muddy Buddies

Another very easy recipe

Ingredients:
9 cups Chex cereal
1 cup semi-sweet chocolate chips
1/2 cup peanut butter
1/4 cup margarine
1 teaspoon vanilla extract
1 1/2 cup powdered sugar
Preparation:
Pour cereal into large bowl; set aside. In 1-quart, microwave-safe bowl combine chocolate chips, peanut butter and margarine. Microwave at 100-percent power for 1 to 1 1/2 minutes or until smooth, stirring after 1 minute. Stir in vanilla. Pour chocolate sauce slowly over cereal, stirring to coat evenly. Pour cereal into large plastic bag. Add powdered sugar and secure; shake to coat well. Spread on waxed paper to cool.

I have heard a lot lately about all of the great benefits of coconut oil. Most people think you just use it for cooking but it can be used for so much more.I received some coconut oils packets to review from Kelapo.

I used the coconut oil on my feet, my heals gets really dry and they were so soft and smooth the next morning. We also used it to drizzle over popcorn, I love the little bit of sweetness it added. I am going to use it when I bake and cook now that I know all of the benefits of using coconut oil. There are so many recipes I want to try on the blog. I really want to try this Homemade Ice Cream In A Bag recipe I found on the Kelapo blog. The kids would love it and who doesn’t like ice cream.

Saucy Potatoes & Ham

I made a menu this week. I use to make a menu all of the time. I actually sat down last night and went through my cookbooks and picked out some recipes I wanted to try. I am using the crockpot for these meals. I love using a crockpot it only takes you a couple of minutes to put everything together and then at 5 we are ready to eat.

Saucy Potatoes

Today I made Saucy Potatoes & Ham. I got this recipe from Gooseberry Patch Slow Cooker Recipes cookbook.

Ingredients:

4 c potatoes,peeled and thinly sliced

1 c onion sliced

10-3/4 oz can cream of celery soup

12-oz can evaporated milk

2 T butter

1/2 tsp salt

1/4 tsp pepper

1-1/2 c cooked ham,cubed

Directions:

Combine all ingredients except ham in a slow cooker;mix well. Cover and cook on high settings for one hour. Stir in ham. Reduce to low settings;cover and cook for 6 to 8 hours, or until potatoes are tender. Serves 4 to 6.

Cheesy Crock Potatoes

I have been trying new recipes this week and also using my crockpot. Today’s recipe I made was Cheesy Crock Potatoes. I got this recipe from the Gooseberry Patch Slow Cooker Recipes cookbook.

Ingredients:

24-oz pkg frozen shredded hashbrowns,thawed

10-3/4 oz can cream of potato soup

16-oz container ranch dip

1 to 2 cup shredded cheddar cheese

salt,pepper, and garlic powder to taste

6-oz can french fried onions

Instructions:

Combine hashbrowns, soup, dip, and seasoning in a slow cooker; heat on low settings for 4 to 6 hours, stirring once. Sprinkle with onions before serving. Serves 4 to 6

I sprayed my crockpot with cooking spray so the hashbrowns wouldn’t stick to it and burn. I didn’t add the can french fried onions. My son even liked these and he is picky. My husband said it was delicious. I really liked it to and will be adding it to the menu in the next couple of weeks. This would make a great dish to take to a picnic , church event or just because.

Baked Potato Cheddar Soup

We have been get a lot of snow here in Iowa. I love to have soup and bread when it is cold out to help warm me up. One of my favorite soup is Potato Soup anytime I go out to restaurants and I want soup I always order potato soup. So I searched for a great recipe for Potato Soup.

One of my favorite recipe websites is Taste of Home.  They have recipes for everything you can imagine. I found a recipe for Baked Potato Cheddar Soup that sounded really good and not to hard to make.

Baked Potato Cheddar Soup

Baked Potato Cheddar Soup

Ingredients

  • 1/3 cup all-purpose flour
  • 3 cups milk
  • 2 large potatoes, baked, peeled and coarsely mashed (1-1/2 pounds)
  • 1/3 cup plus 2 tablespoons shredded cheddar cheese, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup sour cream
  • 1/2 cup thinly sliced green onions, divided
  • Crumbled cooked bacon, optional

Directions

  • In a large saucepan, whisk flour and milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the potatoes, 1/3 cup cheese, salt and pepper. Cook over medium heat for 2-3 minutes or until cheese is melted.
  • Remove from the heat. Stir in sour cream and 1/4 cup onions until blended. Cover; cook over medium heat for 10-12 minutes or until heated through (do not boil). Garnish with remaining cheese, onions and, if desired, bacon. Yield: 4 servings.

The potato soup is really good the only thing that really took any time was baking and peeling the potatoes. I also made Rhodes Frozen Dinner Rolls, put them in a muffin pan and let them rise and baked them as instructed on the packaging.
